| Hi ! Weather is hot and taking care of the kids is funny but heavy! Pushing a twin stroller uphill with the sun really burning is not my idea of fun. But I suppose my baby belly will soon be gone forever... ...at least if I don't make this fabulous pasta recipe too often...! I just tried it and I want to share it with you. (Find it below.) Do you want a smart baby? No? Then stop reading... ;-) Just kidding! But I do want to tell you about an interesting book I recently found. It is called "Raising Smarter Babies" and contains a wealth of information on how to help your little darling develop into his or her full capacity. (And have fun while doing it.) Read on! Well, maybe not, but I really have fallen in love with this pasta dish. Easy to make and even easier to eat... ;-) Fresh Pasta With Pesto (4 servings) 1. Put 2, 7 ounces of pine nuts in a medium hot, dry pan and stir until they have a little bit of color. (Watch out, this goes fast. Don't burn them!) Pour them into a little bowl. 2. Take all the basil leaves and steams from a small pot of basil (3-4 inches wide) and put in a blender together with the nuts, 1 peeled clove of garlic, 1/2 tea spoon of salt and 1/3 cup of virgin olive oil. Mix until smooth. 3. Cook fresh pasta for 4 people. Spaghetti or tagliatelle are nice to use with the pesto. 4. Serve with a tomato and onion salad. (Sliced tomatoes thinly sliced red or white onion, a bit of olive oil, salt, black pepper and balsamic vinegar. Decorate with parsley in small pieces. 5. Slices of halloumi cheese fried in butter also taste very good with the pesto pasta. But fry the cheese just before serving the food, so the cheese is still hot. 6. Mix the pasta with the pesto or possible serve the pesto on top of the pasta on each plate. Put the halloumi on top of it all and serve the tomatoes salad on the side. 7. Enjoy!
